Ceiling Drywall Installation?

I am going to drywall my dining room. i have done just about my whole house and i have used drywall jacks that i own. went to get them and there not there and i am trying to find who borrowed them last. i am having no luck. so i am going to stucco the ceiling so i was thinking the room is 12 by 12 and its 10 high and i got 3/8 drywall. what if i cut the sheets in half and put them up. i know i will have a lot of seems but i don't mind muding enough so that they wont be seen so i can stucco them. like is it alright to do it this way. or will it crack or what. there is a second floor above it. should i stagger my joints or if i dont will it be fine? thanks all
